Blistering are famous for their lavish buffets.... vibrant and opulent displays of seared and wood-roasted meats, fish and vegetables, dramatic long metal shish skewers served by chefs, seasonal salads, fresh breads, salsas and colourful accompaniments. From smoking and exotic Moroccan marinaded roasts and grills to spicy Indian feasts, from seafood themes to mouth-watering meatfests, whatever you decide upon, we see a buffet as an opportunity to put on a show.

Blistering have a 15 year track record of turning up the heat and grilling amazing meat, seafood and vegetatarian dishes fresh from the coals in front of their the audience, helping to create that all important relaxed barbecue vibe. Weather your event is for 100 guests or 8,000 guests we have the experience, the staff, the equipment and the right attitude to make your event a huge Blistering success. All of our meat, fish, vegetables and other food products are sourced responsibly, we have been with our butcher and fishmonger since the day we set up in business and have a trusting working relationship with them.

Pudding buffets

A spectacular pudding buffet with an eye on seasonality is a delicious and flexible way of finishing off a great dinner. And our famous signature Giant Blistering Pavlova with its light, but soft-centred meringue, clouds of berry-studded cream and showers of glittering rose petals is unbeatable as a celebration pudding.

We have seasonal puds from the coals - grilled pineapple with vodka, black pepper and thick cream, or grilled peaches with Amaretto, mascarpone and caramelised almonds alongside other luscious puds from chocolate fountains to chocolate fondant – there’s something for every one of your guests to graze on.

served in waffle cones or bowls with a huge choice of sauces, chocolate, raspberry, butterscotch, peach and salted caramel. Sprinkles, mini chocolate brownies, fresh berries and melting marsh mallow skewers straight from the grill.
