Our Street-food Stalls offer striking and authentic displays of cuisines from around the world. This is a very flexible format offering a mouth-watering choice to any number of guests from 100 to 1000’s rolling out over any period of time, whether for a fascinating graze or for a hearty feast.
Each Street-food stall is individually designed down to the last detail for authenticity and slick service. Maybe your guests will be served by chefs from a Middle Eastern stall with charcoal braziers sizzling spiced chicken skewers alongside a constantly replenished colourful collection of mezze and traditional flat breads, or from a French crêpe stall with freshly made crêpes and an exhaustive selection of toppings and fillings. From a Thai noodle stall with wok-fried spicy prawns accompanied by green papaya salad, betel nuts, rices, sauces and (of course) extra chilli or from an Indian vegetarian chat stall of puris, idlis, curries, chutneys, raitas and freshest salads, Street-food Stalls have a delicious something for everyone.
Wood fired Pizza Stall
Blistering have been making pizzas this way for fifteen years - fresh authentic thin crust sourdough pizzas from huge portable wood fired clay ovens.
with a rich Sanmarzano tomato sauce, fresh mozzarella Fior di latte, parmesan & basil on a thin crust sourdough base with extra virgin olive oil.

A classic white pizza with smoked bacon lardons, artichokes, red onion, thyme and parmesan on a thin crust sourdough base with extra virgin olive oil.
Vegetarian Tart Bianco
Portobello mushrooms, artichokes, red onions, thyme and parmesan on a thin crust sourdough base with truffle oil.
On the side, fresh rocket, balsamic glaze, chilli oil, basil oil.
Vietnamese Pulled Pork Cart
At Blistering we’ve been slow cooking (pulled pork) for many years. We brine pork shoulders for 48 hours, then confit the pork very slowly, and finish it off in our wood-fired ovens.

Pulled pork and grilled sesame buns with Hoisin & tamarind glaze, green papaya, peppers, baby gem & coriander salad with a lemongrass & sesame dressing.
Noodles, vegetable tempura. Green papaya, pepper, baby gem and coriander salad with Mirin and wasabi dressing.
Wood-roast Chicken and Chips Shack
An oldie but a Goldie. The forever popular and very in vogue at the moment chicken & chips. At blistering we brine our free-range chickens for top succulence in a tried and tested recipe of Darjeeling tea, salt, sugar, orange and rosemary for 24 hours and then wood-roast until tender, and juicy with a crispy skin.

Indian Spice Cart
Indian street food is a Blistering favourite to cook and serve to our guests, packed full of fantastic flavors. The head chef/director Nige has been to India seven times on his travels and has a passion for freshly roasted and ground spices and homemade pickles and chutneys.

barbecued with lime and ginger, tomatoes, cucumber, salted onion, radish and moong bean sprouts, drizzled with the hot & sour flavors of pani puri and tamarind chutney. Topped with crunchy sev and wrapped in a homemade rotis.
